Wynn Resorts Offer Vegan Delights

YEAH!!! THIS WHAT IM TALKIN BOUT, I HOPE ALL THE HOTELS GET WITH THIS PROGRAM

The resorts have created an all-new vegan culinary program. The chefs at Wynn and Encore in Las Vegas have designed vegan dishes that highlight vegetables and contain no meat or dairy, instead using exotic grains and vegetables with coconut milk and vegetable purees to lend creaminess to risottos and sauces. Shown above is the tofu carpaccio at SWITCH restaurant, Encore Las Vegas.

Other dishes include fava bean puree with sauteed hon shimeji mushrooms, snap pea salad and aged balsamic vinegar at ALEX and the market chopped salad with avocado, carrots, celery, pumpkin seeds, edamame and tarragon vinaigrette at Society Cafe Encore. Other temping vegan delights include the summer vegetable gratin at Botero, risotto con verdure di stagione (risotto whipped with seasonal vegetables) at BARTOLOTTA Ristorante di Mare and Napoleon of savory tofu with ratatouille and fried eggplant at Tableau. The Country Club has a vegan version of their popular watermelon gazpacho with avocado, jicama, tomato, cucumber, cilantro and yucca crisp and STRATTA offers whole wheat pasta primavera. Even at SW, Wynn’s signature steakhouse, vegans will dine well on grilled royal trumpet mushrooms with creamy polenta and shallot balsamic sauce.

Wazuzu’s vegan crunch roll with crispy asparagus, avocado, cucumber and arare; Okada’s vegan cold soba noodle and Wing Lei’s crispy tofu with sugar pea, water chestnut, carrot and bean sprout feature flavorful Asian ingredients. Vegans aren’t left out at desserts with treats like blueberry cobbler with toasted almond ice cream at Sinatra and banana crepes with coconut ice cream and avocado mousse at SWITCH.

  3. Damn, the gazpacho recipe is simular to mine, but instead of jicama I use mango & at time I also add shrimp. It seems like nearly every recipe included avocado, and the palate isn’t the only thing it stimulates. LOL

  6. This is good news! You guys need to pay attention to what you put in your body..I’m vegetarian,but I plan on going vegan by next summer. That takes ALOT of discipline, so when you see him working on 2 hours of sleep, i bet he will tell you that before he went vegan, he was tired more often than now. Being successful means taking care of your mental and physical health. You can’t make money if your sick PEOPLE! Catch up and stop eating that DIRTY MEAT!!!

    3rd. gazpacho recipe, has not mango or shrimp… why in this world people has to prove they know something more when they never even walk out their country…

  23. @ijustkdifrentLTL, cooking is about taste & the love that’s put into it. LMAO, cause i’ve never googled a recipe. Clearly making assumptions with reguards to what I eat has made you a donkeys rear end & no matter what you wash it with, it will always be an ass & shit can’t be cleaned!
